Yes you absolutely can!  In doing so, you will want to be sure that the image (if you are using an image) is uploaded to your Yahoo! Store, or to a public location such as Flickr or Google Photos.  You can then use  the HTML to reference the location of the image.

I’m trying to edit a product, but I’m missing the ship-weight, price and options fields.

Those will be removed from an edit page, if you click the “Hide Product” button on the edit page. That button is used to change an item page to a section page.
If you simply click “Show Product” the price, sale-price, options, ship-weight, and taxable fields will appear again, and can be edited again like usual.

My product options incur an additional charge, how can I make my Yahoo store charge extra for one option?

The options are created the same way. For the choice with the additional charge you’d follow the option value with the amount of the up charge in parentheses. So you’re options would like this:
Size Small Medium Large “Extra Large(+$2.50)”
